October is Guardianship month. Guardianship and Protective Services (GAPS) is our longest running program. If an individual is legally incapacitated, has no advance directives, and is non-compliant with the necessary assistance to provide for their well-being, then guardianship may be the only alternative to keep him or her safe. Because guardianship removes a person’s rights, it is used only as a last resort, to protect the most vulnerable of individuals. Care Source’s guardianship program is recognized as a leader in filling the “GAPS” left by other social service agencies in the South Florida community. Most of our staff has taken the 40-hour state-mandated Professional Guardian training course. CareSource has trained more than 2,000 guardians, helped develop the Professional Guardian Competency exam and offers the only 250 hour Guardian Internship Program in South Florida.
Read on to see how we help, how the generosity of a local business is helping to create our new image, how our paralegal helps to protect our guardianship clients, and how to create amazing eggplant boats that will float to your table. |

Carla (fictitious name) lived alone in a condo with no family to support or visit her. She had multiple medical issues and was lonely. An unrelated family moved in with her to help her out and keep her company. Soon this family was taking advantage of her financially. Carla’s neighbor reported the exploitation and CareSource was called in to become her legal guardian. Thanks to the dedication of our Care Manager, Alan Hooks, Carla was moved to an assisted living facility where she was safe. Carla had access to all of her assets and personal belongings and received necessary medical care that helped to improve her medical conditions. Earlier this year, Carla’s health was failing and she was in intensive care on a ventilator. Carla did not have any advanced directives and her life values history taken by CareSource did not provide a clear understanding |
of her wishes if she were to become severely ill. The hospital wanted to take her off of the ventilator, but our Care Manager advocated for her and Carla, despite the odds, improved and moved back to her assisted living facility. She lived a few more months, enjoyed her visits with Alan, and then peacefully passed away in her sleep. |

Findings from a new study show that breast cancer diagnosis is delayed in elderly patients, due in large part to the underuse of mammography and also because these patients are not treated as aggressively as their youger counterparts. |

Ingredients:
1 Large Eggplant
2 tablespoons butter
2 onions, peeled and diced
2 cloves garlic, peeled and crushed
1 pound ground beef
¼ cup bread crumbs
1 cup canned tomatoes, drained and coarsely chopped
½ teaspoon dried basil leaves
1 teaspoon salt
½ teaspoon pepper
1 8-ounce package mozzarella cheese, cut into slices

Steps
1. Preheat oven to 350 degrees. Slice eggplant in half lengthwise. Scoop out pulp, leaving a ½ inch shell. Cube the removed eggplant, place in a bowl and sprinkle with 1/2 teaspoon salt. Melt butter in skillet and add onion and garlic, sauté until golden brown, stirring occasionally. Add ground meat and stir over moderately high heat until browned, breaking up meat with a fork. Remove skillet from heat. Drain cubed eggplant, mix with bread crumbs and meat in a large bowl. Stir tomatoes, basil, salt and pepper into meat mixture. Spoon meat mixture into eggplant shells and set them in a shallow baking dish. Bake stuffed eggplant 55 minutes, or until shell is just tender and meat lightly browned. Place cheese slices on top of stuffing and bake 5 minutes longer. Arrange eggplant on a large platter and cut slices or serve each half as a main dish.
*Can substitute most ingredients: ground turkey breast instead of meat, oil instead of butter and lower calorie mozzarella cheese.
